What is the difference between all those flours in the store?
As part of our “demystifying bread making” journey, the above link is a simple break down of the most common types of flour, and how they differ from each other.
A few additional things to know:
- All-purpose flour in the northern part of the country is made differently than it is in the south, so the same recipe might perform very differently depending on where you buy your flour.
- Most hardcore bread bakers I have met seem to swear by King Arthur brand flour.
- Whole wheat and rye flours go rancid quicker than all purpose, so if you don’t use them that often you may want to store them in the fridge. That being said, I have not yet had an issue with keeping my whole wheat and rye flours in the cupboard. *fingers crossed*
King Arthur bread flour for the win. Bob’s Red Mill Unbleached Organic white and also the whole wheat flours also for the win.

so sick of poor people using the excuse of being poor to eat crap and constantly wining about it ….. this is basically what i’ve been saying all along.
Wait, wait, wait, this is such crap. I just saw a pound of chicken up there go for 98 cents. 98 cents? Where the fuck are YOU shopping? 1972? I bought a pound of chicken here and it cost $7.
I agree you can eat more healthily for the money you have (we certainly didn’t live in the lap of luxury growing up, but we never got fat off the food we ate), but it’s best we don’t LIE about it. I haven’t found bananas for 47 cents a pound since 2003 (at a local grocery store, they’re actually going for a buck apiece… I don’t go there; I go where there’s a per pound price). A pound of baby carrots does not cost $1.44.
I swear I’m not trolling, but I’ve seen all of those groceries for that price in the city in which I live, San Antonio. Tyson/Tortured chicken thighs are 88 cents a pound, exploitated workers bananas are 44 cents a pound, and so on and so forth.^ It really does depend on where someone lives. Food prices up here are kind of ridiculous because we are so far away from any major cities. I definitely couldn’t buy all of the food listed for that cheap. I can buy enough food to last me a week for $30 bucks, but it’s going to be mostly ramen, rice, and maybe some store-brand frozen veggies (definitely no meat, a bag of lentils is cheaper and lasts longer for a source of protein). No fresh veggies or fruits that’s for sure. For me to eat healthy (non-organic) all week (breakfast/lunch/dinner/snacks) is going to cost somewhere around $80 (maybe more) and that is just for one person. Bananas though are always weirdly cheap. I can buy organic bananas for 79cents per pound at the local Hannafords.
Hey, let’s talk about privilege. Let’s talk about how my mother wouldn’t have the time to cook any of those foods because she is in grad school and working full time. All of that food takes preparation, which poor people can often be lacking in. Also, they lack mobility and access to the store.
YOU DO NOT HAVE THE RIGHT TO JUDGE WHAT POOR PEOPLE EAT JUST BECAUSE THEY ARE POOR. PEOPLE PEOPLE HAVE JUST AS MUCH RIGHT TO EAT AND ENJOY A PIZZA. BECAUSE BEING POOR SUCKS.
This could be better, but also YOUR FOOD PRICES ARE WRONG. Clearly you’ve never had to buy bread in Berkeley.
I work at a grocery store. Half a gallon of milk is $2.59, a whole is $3.69. Generic brand. Not $2.
Morning star burgers are $3.79 not $2.98. All natural peanut butter is nearly $4 not $2.38. That brand of bread is over $3.50 and you’ll never find half this shit on sale for even close to these.
I fucking laughed out loud at how ridiculous this is. I doubt even in San Antonio you’d find all these prices to be accurate, this is such bullshit.

boom, what hope said. food is food, people need food. stop trying to justify why you need to be a privileged asshole telling people on food stamps to eat healthier when they cannot afford it time/money/transportation wise. fucking christ it pisses me off when people blame the ones being oppressed rather than the ones who are doing the oppressing.
agree that the image is bullshit. in santa barbara 1 pound of vegetables costs at least 2.50, bananas double that price, spagetti is NOT 88 cents (if it was that is all i would be buying, 1 pound 96% lean ground beef is NEVER as cheap as 2.98… that shit is usually at least 7.00… those are all the prices i have memorized for what i consider “cheap” which really isnt since the prices of food have increased in the past months.
